Karakteristik Mutu, Rantai Dingin, Rendemen dan Produktivitas Pengolahan Tuna (Thunnus sp.) Cube Beku di CV. Satu Tuna Nusantara, Denpasar-Bali

Tuna (Thunnus sp.) merupakan jenis ikan laut pelagis yang termasuk dalam keluarga Scombroidae. Salah satu produk atau olahan dari tuna adalah cube beku. Tujuan penilitian ini untuk mengetahui mutu, rantai dingin, rendemen dan produktivitas peoduk Pengujian mutu bahan baku beku meliputi pengujian organoleptik, mikrobiologi (Angka Lempeng Total, Salmonella, Vibrio cholerae, Escherichia coli, Coliform parahaemolyticus), kimia (histamin). Dalam proses pengolahan dilakukan pengamatan penerapan produktivitas. Hasil uji organoleptik mendapatkan nilai 8 sedangkan 9. pada ALT bakteri tidak melebihi 5 x 10 ³ kol/g, <3, E.coli Salmonella cholerae Negatif serta parahaemolyticus Negatif. Sistem dingin sudah diterapkan dengan baik. Rendemen tahap pembentukan 16,38% produktifitas karyawan memenuhi standar perusahaan. Secara keseluruhan telah SNI Steak Beku 8271: 2016 ekspor.
